Then it’s beachside with Chef Justin for a seafood extravaganza where the shrimp get a bigger applause than Chad.

Yield 15 servings

Ingredients

  • 4 large Florida onions
  • Smoked sausage
  • 25 Small Florida potatoes
  • 8 ears of Florida sweet corn, cut in thirds
  • handful of garlic cloves
  • 2 bags seasoning in a bag (Any brand boil-in-a-bag will work, your preference)
  • 40 Florida clams
  • 12 Florida spiny lobster
  • 50 Florida shrimp
  • Live Florida Blue Crab

Preparation

  1. Get the biggest pot you can find and preheat
  2. Add vegetable oil
  3. Add onions and cook until softened a little
  4. Add in summer sausage
  5. Add garlic
  6. Cook until everything is a little brown or you run out of oil
  7. Add in a bucket full of water
  8. Add in seasoning – 1 in the bag, 1 out of the bag
  9. Put a lid on the pot and bring to a boil
  10. Add in potatoes
  11. Add in corn
  12. Add in blue crab
  13. Add in clams
  14. Add in lobster
  15. Add in shrimp

    Do you have to use summer sausage or can you use hot Itallion or other sausages for diffrent tastes ?

    Marilynn – Any sausage should be fine if you wish to change the flavor of the dish.

    How much salt do you use if you only have fresh water?
    How long do you cook the potatoes before you put in the corn? How long do you cook the corn before you put in the crabs? How long after the crabs do you put in the clams? How long before the lobster and how long before the shrimp?

    Bob-
    Salt is your preference, you want the potatoes and corn cooked most of the way before you add the seafood because seafood cooks quickly.
